The 2021 Château Sainte-Eulalie “La Cantilene” is aromatic and textured. The nose shows blueberry, eucalyptus, and wild herbs layered with warm baking spices. The rustic palate is savory and spice-driven, with tart dark fruit lifted by balanced acidity and refined tannins. Notes of dried herbs and pepper linger on a long, earthy finish that reflects its Mediterranean origins. This would be a lovely little accompaniment to your go-to weeknight dinner.
