Scotland's first organic whisky distillery sits on one of the country's most remote peninsulas, and it makes its whisky the way it lives: quietly, on its own terms. Nc'nean works with organic, unpeated barley and twice-distills it in copper pots, which gives a fruit-driven malt with nothing to hide behind. Each autumn the Quiet Rebels series hands a bottling to someone on the team. This year it's Simon, a longtime distiller and self-declared beer fanatic, who finished his whisky in stout casks. The AON bottling is a single cask finished in Moscatel. Come taste whisky with a point of view.
