Notes
La Cerbaiola is the Salvioni family’s Brunello di Montalcino, first bottled with the 1985 vintage. Giulio Salvioni and his wife Mirella developed the estate from a family tradition of making wine to share with friends. Vinous’s assessment of the 2021 emphasizes crunchy red fruit, fine tannins and unusual persistence, with floral and herbal detail emerging through the density. The earlier barrel review from JebDunnuck.com describes a more angular structure, sustained by acidity and tension. Both reviews describe a long finish supported by the wine’s youthful structure.
