Reviewed July 2020Perfect for drinking now but sure to last for another decade or more. The aromatics of this are just gorgeous, unfurling in the glass to show russet and undergrowth, liquorice, soft black chocolate and savoury but welcoming berry fruit. This 2007 vintage saw a cool summer but a warm September and October, meaning careful work in the vineyard and patience was necessary. Underestimated on release. The wines might not have the structure for long ageing as with 2010 or 2000, but they are blossoming right now, and offer great pleasure; classic balance. (JA)

High Cabernet Sauvignon and the oak upped to around 60% new, higher than usual but well integrated at 17 years on. This is showing well right now, fully in the drinking window and extremely moreish, gentle fine tannins, elegant architecture, soft blackberry and blueberry fruits, velvety texture and a drawn out finish. Harvest September 21 to October 12. Denis Dubourdieu consultant.

Tasted at BI Wine & Spirits' 10-Year-On tasting, the 2007 Haut Bailly has a beautiful, quintessential Pessac bouquet with touches of warm gravel filtering through the black fruit. The palate is medium-bodied with impressive, tightly knit black fruit laced with cedar and white pepper. There is superb weight in this 2007 considering the vintage, doling out fine mineralité on the persistent finish. Very fine, but I would actually wait another couple of years before broaching. (NM)

A dense wine, very much in the line of powerful wines from Haut-Bailly. Flavors of bitter chocolate, sweet berry fruits and richness are dominant, the acidity a fine balancing act to give a burst of freshness. (RV)

I drank this with a medium rare skirt steak and frites- I was in heaven! This 2007 is drinking beautifully now but will easily cellar for another decade or more. The wine is dry and medium bodied yet packs an incredible amount of dark fruit power all at just 12.5% alcohol. I loved how it had classy polish with catnip like French oak but also had the vibrant gravelly finish that can only come from the best sites in Pessac-Léognan. This has everything from subtle baking spice and new leather to earth tinged cassis fruit. A week later, I am still thinking about it.

This classic wine, from a cooler vintage still has a long way to go in the cellars, however after decanting it for say... 1 hour or 2, it delivers a nicely perfumed aromatics and a robust palate that really shows off its terroir.

Another '07 that is out performing the price point. The ultra old school style, which is usually pretty darn tannic until they're 20+ years old is actually showing extreme elegance in this cooler vintage. Big perfumed nose of mineral, gravel, dark cherry and exotic aged woods. Structured and mouthfilling, but not heavy or tight at all. For the quality and reputation it's great to take advantage of the odd vintage discount.
