Khee is a recreation of the most traditional style of Korean Soju. Using 100% rice and mineral water drawn from 500 feet underground. Rested for 3 months in Onggi earthenware before bottling without any additives, adjustments or flavorings of any kind. This collaboration between founder Eva Chow and Master Soju maker Hwayo is intended to capture the pre-prohibition style of Soju as the modern industrial Soju's currently available cannot. Ultra crisp and clean, yet with a subtle intriguing character, it plays effortlessly in cocktails of any kind.

Full-bodied, layered and rich, yet with the purity and precision that's present in all of these 2014s, drink bottles anytime over the coming decade, and I certainly wouldn't be surprised to see it keep for longer. Shypoke’s family has farmed its Calistoga property since 1904, giving this 2021 red blend a direct connection to one of Napa Valley’s long-established agricultural estates. “The Keep” carries the Calistoga appellation, located at the warm northern end of Napa Valley.

Grapes are sourced from the estate’s 2.8-hectare holding in Yountville. Farming is overseen by Jim Barbour, with four different clones of Cabernet Sauvignon planted on this notably cool site. Celia Welch has worked with the family since their inaugural release in 2002, and the wine is aged for 19 months in roughly 60% new French oak. The result is a positively unctuous yet poised Cabernet: expressive, with classic blackberry and blackcurrant fruit layered over tobacco and loamy earth notes, alongside a dark cocoa character. A fine thread of salty, crushed-stone minerality runs through the wine, framed by very fine-grained, velvety tannins that are beautifully, seamlessly integrated. There is excellent concentration, energy, and a sense of juiciness and brightness that feels more in line with 2023 than 2021—something Welch attributes to the naturally cool nature of the site. A Cool and composed, black-fruited, mineral-rich, and classically-styled Napa Cabernet.

Jeb Dunnuck: "Coming from the Sonoma Coast, the 2016 Pinot Noir Keefer Ranch offers a classic, perfumed, red (sometimes blue) fruit driven perfume that I often associate with this cooler region. Wild strawberries, pomegranates, forest floor, and hints of leafy herbs all emerge from this medium-bodied, incredibly elegant and seamless Pinot Noir. I love its purity of fruit. It offers intensity with no weight and a great, great finish. It’s a brilliant wine." (06/2018)

The 2015 Cabernet Sauvignon is another attractive wine from Wheeler Farms. Exotic and racy, in the style of the year, the 2015 has plenty to offer. I would prefer to drink it over the next handful of years. Next to the 2016, the 2015 is decidedly on the riper, more overt end of the spectrum. (AG)
