This is not your typical Champagne, and the care behind the winemaking shows in every sip. Even the name hints at its story, loosely translating to “a blend of historic varieties.” While most classic Champagnes revolve around three main varieties, this cuvée takes a different path with approximately 40% Petit Meslier, 40% Arbanne, and 20% Pinot Blanc. The grapes are harvested later in the season and co-fermented, two choices that set it apart and give the wine its layered complexity. What comes through in the glass is something both bright and textured. There are fresh citrus notes, sweet apple, and a smooth creaminess that keeps everything balanced. The lees influence is present, adding depth and character without overpowering the palate. If you think you’ve already experienced everything Champagne has to offer, this bottle is a reminder that there’s still plenty left to discover. Here, the addition of 40% high-altitude Syrah brings an extra spark of acidity that gives the wine energy and complements Grenache's natural roundness. I particularly enjoy how the oak softens Syrah's peppery notes and greener edges, allowing its spice character to shine without taking over. Honestly, this is the sort of bottle I'd happily open at lunch, pour another glass with dinner, and slowly finish over the course of the evening. 2018 Billecart-Salmon 250th Anniversary Vintage Champagne

2018 was an especially beautiful year, with ripe fruit and relatively low acidity. As the aromas revealed themselves, the first thing that came to mind was toasted bread spread with warm butter and honey. Then it developed into fresh apple, blooming flowers, and bright citrus notes that gradually came into focus. I love how seamlessly the palate follows the nose and intensifies those exact profiles. Though only a small portion saw oak, the wine carries a gentle roundness layered with a lees character and a mineral finish that keeps it refreshing. Elegant and comforting, this is the kind of Champagne that disappears from the glass far too quickly.

Mantensei Kinoko Junmai Ginjo Sake (720ml)

I had a feeling this sake would be special just from the label- a playful bouquet of mushrooms in all shapes and colors, hinting at what’s to come. And it delivers! This Junmai Ginjo opens bright and lifted, yet surprisingly full, gradually developing into something richer and more layered. I especially like its complexity, balancing savory and sweet- earth and toasted nuts alongside notes of honey and sweet miso. The finish leans into umami, with a mouthwatering mushroom note that ties everything together. It made me think of a steaming-hot pan of juicy foraged mushrooms, deglazed with a splash of this sake to make the flavors burst even more. While I often serve lighter, more delicate styles chilled, this is one I’d gently warm so it can open up and show its depth.

2023 Domaine de Fondrèche Ventoux Rouge

A delightful young wine that, without a doubt, will only get better in the next few years. On the nose, you get blackberry, plum, and a pleasant hint of charcuterie. The palate is dominated by berries and high tannins. It has a medium-to-full body and a long finish. This wine can provide immediate satisfaction or, if you'd prefer a more velvety mouthfeel, be a great wine to lay down for a couple years.

2024 Ridge Vineyards Paso Robles Grenache Blanc

While the winemaker behind this delicious Grenache Blanc is being playful, this bottle doesn't play around. You can really tell how much effort went into making it- from the precise combination of varieties (85% Grenache Blanc, 12% Picpoul, and 3% Roussanne), to the meticulous fermentation process that involves stainless steel, barrels both old and new, as well as amphora and concrete tanks mixed in. The result? A vividly aromatic wine, that’s complex and serious but still fresh and vibrant. The bright acidity balances the smoky flint notes, and the savory minerality ties the whole thing together beautifully.

2023 Les Athlètes du Vin Grolleau Vin de France

With its low acidity and gentle tannins, the cherry flavor pops on the palate. I really liked it, and next time I’m definitely trying it chilled- it's perfect for a warm day! Honestly, it’s the kind of bottle you can bring to anyone who likes an easy, refreshing red. Safe choice, and super enjoyable.

2021 Heitz Cellar Napa Valley Cabernet Sauvignon

This Cabernet caught me by surprise. As someone who prefers old, round, and rich wines. I was impressed by how many of those qualities it already has at a relatively young age. The ripe black fruit and the leather notes stand out the most, but what really won me over was its balance - just the right amount of acidity, with soft tannins that aren't overwhelming. I would definitely have it again, and I can’t wait to see how it develops with a few more years on it.
