Emidio Pepe’s Trebbiano d’Abruzzo follows the family’s longstanding method for its white wines. Grapes are harvested by hand and gently foot pressed in wooden vats. Only the juice is transferred to small concrete tanks for spontaneous fermentation. The estate has used concrete since 1964, keeping maturation free of oak influence. The wine moves from concrete to bottle without filtration, with further development taking place in glass.
