This distillery in the mountains of Oaxaca is one of the most exciting rum producers in the world. Their wild set up consists of both handmade column and pot still, natural fermentations and various aging environments. The powerful white spirit is diverse and complex providing the perfect canvas maturation. This exquisite barrel explores the possibilities of both French and Hungarian oak on the exceptional high quality spirit. Let's give it a go. The color is splendid mahogany (1.6). Immediately clear that this is one of the most pungent and appealing young spirits available anywhere. Dense dried herbs, stewed tropical fruit, powerful exotic wood - it's bold but not overtly ester-y like a Jamaican or strongly olive-y like a Haitian clairin. On the palate, it's oily and round big spices, sweet and savory elements inter mingled with a broad spectrum of delicate and exotic flavors - mahogany, sandalwood, tobacco, citrus oil, salted dates, pine resin. It may not be gnarly enough for those hoping for a hardcore clairin style aged spirit, but it's so overtly pleasurable, it will be difficult for even the most jaded skeptic into a convert. Easily one of the most fun and delectable young rums on the market today.

Notes

Alambique Serrano’s Comerciante II is proof positive that the Krassel family is creating the world's most compelling cane spirits in their humble high altitude distillery. This single barrel bottled exclusively for K&L Wine Merchants was distilled in November 2021 from fresh Java varietal cane harvested from 2,500 to 3,800 feet in Santa Maria Tlalixtac, this wild-fermented rum captures the essence of high-altitude Oaxacan terroir. Fermentation took place in open pine tanks with ambient yeasts before being pot-distilled by Rommel Krassel in a hand-built copper alembic. Aged 27 months in new French oak and finished for 3 more in new Hungarian oak, this single barrel spent its entire life resting in a dry mountain climate. The result is an astoundingly complex spirit bottled at a full 130.8 proof, with no water, sugar, or coloring added. The nose brims with sandalwood, cacao nib, overripe fruit, and wild herbs. On the palate, it’s bold and textured, offering waves of dark caramel, clove, grilled pineapple, and toasted spice, all lifted by the natural freshness of cane juice. Just 132 bottles were filled in March 2025 with an 11 percent angel’s share. This is small-batch, high-proof rum at its most expressive, and one of the finest examples of new wave Mexican distillation we’ve seen.
