When I tasted this in France, it was love at first nose. This had an expressive nose of Golden Delicious apples, white flowers and honey. This is what I think of when I think Northern Rhone whites (not the Viognier based kinds of course). This is fleshy and rich but there is sneaky acid and phenolic structure. Nothing better for fried chicken or a pan roasted hearty fish dish. This is quintessential St-Joseph Blanc!

When Julien Pilon studied winemaking, he worked with people like Yves Cuilleron, Mas Amiel and Pierre-Jean Villa. This first generation winemaker started his own project in 2010 making his first vintage in his parent's garage. First buying fruit from other growers, he began to build up his own brand and winemaking style purchasing his own cellar in the summer of 2020. Julien owns 5 hectares has several more under contract and still sources top quality fruit his neighbors. Much like Yves Cuilleron he covers the range of the Northern Rhone across all the major appellations, including Cote-Rotie, Saint-Peray, Saint-Joseph and Condrieu. His focus is primarily on white wines, which make up about 70% of his production. Pilon’s wines are clean, precise and exciting, showing the passion of this creator and the potential of this emerging estate. The "Un Dimanche a Lima" is a blend of 50% Marsanne and 50% Roussanne. All grapes come from the northern part of Saint-Joseph and are hand harvested. Each lot is fermented in tank separately and the wine ages in wood with a small portion of new French oak.
