Reviewed January 2023The 2021 les Preuses from the Dauvissat family is an absolutely exceptional version of this
iconic Chablis bottling. The gorgeous nose soars from the glass in a mix of sweet grapefruit, lemon,
apple, a complex base of chalky minerality, a touch of oyster shell, white lilies and vanillin oak.
On the palate the wine is deep, pure and full-bodied, with an outstanding core of fruit, great mineral
drive and focus, with seamless balance, zesty acids and a very long, complex and refined finish.
Stunning juice. 2028-2075.

An elegant, pure and airy nose is comprised by notes of zest, ocean breeze, quinine and white flowers. There is terrific underlying tension to the bigger-bodied yet even more refined flavors that brim with sappy dry extract on the highly complex and persistent bone-dry yet not really especially austere finale. This is built to reward extended keeping and I would recommend not touching a bottle for at least a decade. Terrific. *Burghound Don't Miss!*

Mid yellow, more tension, a bit of muscle, backward, then a wealth of flesh, white fruit with some bacon notes. Multi-layered, a little more forward than some years, but the whole wine is there to see. When pressed, Vincent declines to specify a favourite vineyard, but nonetheless…. Drink from 2028-2036

The 2021 Chablis Grand Cru Les Preuses is bright and aromatic, bursting with notes of white flowers, crisp orchard fruit, nutmeg, iodine, clear honey and oyster shell. Medium to full-bodied, racy and incisive, with a charming core of expressive fruit and a long, perfumed finish, this is already quite open out of the gates for a young Dauvissat Preuses in a cooler vintage.
