UNDER THE RADAR As expected from Jean-Francois Bordet, this is a Fourchaume which balances power and precision. Intensity on the nose with notes of ripe apricot and pear fruit, whilst the palate balances this with a salty, mineral struck aftertaste all kept fresh by a fine line of acidity. A very classy effort in this tricky year. (AH)

A slightly cooler, airier and more citrus-suffused nose features notes of mineral reduction, iodine, seaweed and green apple. The middleweight flavors don’t possess the same amplitude but are both finer and more chiseled, particularly on the linear, stony and bitter lemon-inflected finish. While qualitatively similar, these two examples of Fourchaume are in fact quite different. *Burghound Sweet Spot Outstanding!*

Vinous

The 2021 Chablis Fourchaume 1er Cru has a more vivacious bouquet than the 2021 Chablis Fourchaume from Domaine des Malandes, with citrus peel, honeysuckle and light flinty aromas. The palate is well balanced with a fine bead of acidity, not a powerful Fourchaume but quite precise on the citrus and lemon sherbet tinged finish. Not a long-term wine, but it should provide several years' drinking pleasure. Tasted blind at the BIVB tasting in Chablis. (NM)

Since visiting this property in March, we have drunk his incredible 2021 Domaine Seguinot Bordet Chablis 1er Cru "Fourchaume"twice. This wine comes entirely from the much more limestone rich northern plot of L’Homme Mort within Fourchaume, just south of Maligny. This wine is loaded with oyster shell savor and incredibly zippy lime fruit, along with body that reminds me of the best of the Côte d’Or. The finish is super long and brings back the clean oyster shell minerality of the nose, carried by a wave of refreshing acidity. It went great by itself as the aperitif in our airport hotel before leaving France, and even better with Dungeness Crab two ways at home a week after returning!

Notes

From the producer, "Very pretty pale golden yellow in colour with light greenish glints. Bright, luminous and limpid. The nose is an explosion of fine fresh notes, of elegant white flowers, fresh brioche and leafy tenderness. The taste reveals instantly all its power, richness and elegance-perfect balance of finesse, mineral, mellowness and vivacity. It generously offers us a full spectrum of aromas. The finish just goes on and on, never to the forgotten."
