2021 Domaine Séguinot Bordet Chablis Vieilles Vignes

The 2021 Chablis Vieilles Vignes works much better than the Chablis Village with far more delineation and terroir expression. The palate is well balanced with a fine bead of acidity, elements of lemon rind and Granny Smiths, lightly spiced towards the finish with just the right degree of terseness. Very fine. I was lucky enough to visit Jean-Fracois Bordet at his winery this March. The oldest vines in the 2021 Domaine Séguinot Bordet Chablis Vieilles Vignes were planted in 1906, and the youngest are 58 years old- so calling this vieillies vignes is no exaggeration. This almost clear wine has an incredible nose of clean Chablisienne earth, high toned lime fruit and a focused, lively, and a profoundly mineral finish from the deep roots of the ancient vines. We previewed a bottle of this before our trip with homemade fish and chips, and it was amazing!
