We have two Papalometl's from the same part of Oaxaca, the Mixteca, that couldn't be more different. This wild meaty one from David Herrera is made super traditionally, fermented in cowhide, hand crushed and clay pot distilled. This one using mechanical grinders and copper pots is no less interesting though. The nose is a bit of a spice bomb tempered by overripe tropical fruit, passion and papaya. Big cinnamon and pepper coming through on the palate and some grapefruit rind along with a creamy mouthfeel. This stuff is very fun and completely unique in the line up. Totally in love with the Mixteca mezcals, a highly underexplored and undervalued region with a massive amount of diversity of flavors available.

Alright this is just bonkers in the very best of ways but it's absolutely an insane product for people who are looking for something absolutely unique. The nose has really pretty apricot and peach notes, but also there's movie popcorn butter and Cheetos, and a kind of melted banana plastic with a little bit of something medicinal. I understand that this sounds bizarre, and it's definitely a little bizarre but it's also incredibly fun for the adventuresome palate. The palate has tons of dried mango, dried pineapple, lime peel, and a little bit of that medicinal note. This is really an amazing product, there's a kaleidoscopic quality to the whole thing and it's not just a drink this is a whole damn experience.
Notes
One of two Paplometls we purchased from Melate in very contrasting styles. This one from Maestro Don Erubiel is from Zapotitlan in La Mixteca; this culturally distinct area encompasses parts of Oaxaca, Guerrero and Puebla. The palenque requires a harrowing six hour drive on mountainous roads to reach, but the quality of the mezcal is well worth the wait. This extremely delicious batch of Papalometl uses wild harvest agave between 8 to 13 years of age. Roasted underground and shredded in a gasoline powered mill, the long slow fermentation lasts 12 days before a double distillation on small copper pots.
