Heidrun "Madras Carrot Blossom" Sparkling Mead, California (750ml)

Heidrun is a meadery in Point Reyes Station, Calif. that specializes in dry and crisp sparkling meads produced from single-varietal flower honeys. All of their meads are produced in the Champagne method--complete with riddling, disgorgement, and secondary fermentation--and are serious, Champagne-inspired sparklers with delicious honey flavors. The Madras carrot blossom mead gets its less fruity, dry and clean notes from honey collects on a seed farm near Madras, Oregon. Bees are required to pollinate the carrots that are let to go to seed to be harvested. Look for a grainy, lager or weissbier note on the finish.
