Domaine Pacory 8 Year Old "High Proof" Domfrontais Cask Strength Calvados (750ml)

The long-awaited follow up to the incredibly well loved High Proof reserve, which we sold some 6 years ago. This one starts with a base of 100% pear 8-year-old Calvados at 53% abv, blended with older cask strength 100% pear Calvados, to achieve a balance of complexity and power unprecedented in the category. Domfrontais' distinction from other AOC Calvados spirits is the heavy use of pears in the recipe. Domfrontais brandies generally have 60% or more pear distillate in the eventual blend, adding an entirely different dynamic to the flavor. The deep soils lend themselves to the deep rooted pear trees. One of the interesting aspects of Pacory's production is that the owner, Frédéric, likes to fill at higher proofs than other producers typically do. That meant that a number of his younger Calvados would still be quite powerful. Using these heady younger high proof brandies, tempered with older stocks, proved a winning recipe. The result is a 100% pear minimum 8-year-old Domfrontais Calvados at full proof for a price that's too good to beat. This brandy is brimming with pure stone fruit flavor, bright apples and robust pear, with lovely weight and balance. The color is a golden yellow, much like a pear itself. For anyone looking for an apple brandy spirit to mix with or sip on, there is little better out there on the market than this stupendous PEAR brandy!
