Composed of 100% Cinsault, the 2025 Vin Vif (Union Sacre) Central Coast Cinsault underwent 20% whole-cluster, native fermentation in stainless steel. Lovingly punched down by hand twice daily, and aged in neutral puncheons for six months, only 300 cases were produced. Bright and fresh flavors of blueberry and tangy fruit leather mingle with delicate notes of black pepper. Thoughtfully made yet unpretentious, serve this with a chill without a care in the world.
