This single barrel of Sonoma Distilling Co's Cherrywood Smoked Bourbon is a beauty. Adam Spiegel, owner and whiskeymaker, has been distilling his own whiskey in Sonoma since 2010. He uses all non-GMO grains that are milled in house to a fine flour. The mash is distilled on copper alembic pot stills with a direct fire element and aged in a #3 charred 30-gallon barrel. The mashbill is quite unique and provides one of the most compelling and creative bourbon drinking experiences of any distillery. 67% corn, 20% rye, and 13% cherrywood-smoked barley is a very traditional looking mashbill save for the barley element being smoked in Petaluma over cherry wood. The result is a gentle yet fruity smoke that plays extremely well with the sweeter corn and spicy rye elements. This special barrel was distilled in early 2016 and bottled on June 15th of 2021. Aged for nearly 5 years in 33-gallon new charred oak, the unusual production methods add incredible depth and complexity to this special bourbon. A unique but utterly delicious barrel from one of California's best craft distillers.

It's really neat to have such a unique and well-made product out of our own backyard. The laborious use of a pot still increases the concentration and gives incredible length and complexity. The smoked cherrywood offers a light smokiness with a strong Bourbon-y backbone. The third degree charred barrel gives that great richness and warmth, but doesn't overwhelm or compete with the smoked cherrywood. A lot of care and dedication go into this special one-off bottling and that effort is evident in this super tasty whiskey.

The art of innovation comes in two forms: radical and subtle. While many American producers have tried more radical approaches to making a bourbon smoky, Sonoma Distilling has nailed the subtle side of the equation. This bourbon is made from what appears to be quite a traditional mash bill: 67% corn, 20% rye, and 13% malted barley. The key difference is in that small 13% portion. They've smoked that barley over cherrywood. The final product is a double pot distilled bourbon of supreme quality with a unique and sophisticated smoke influence. Maraschino cherries combine with sweet vanilla and sarsaparilla laden with caramel, spice bush, and just an elegant touch of smoke. Not overpowering, it's still quite clearly bourbon, but with an edge of intrigue. Just enough to encourage you to dig deeper into the glass and farther down into the bottle over and over again. Bottled at a whopping 55.5% it's got a lot of power behind it as well. At 4 years old this is just a perfect balance of raw ingredients and time in barrel.
