A classic Corsican aperitif wine, Mattei's Cap Corse Blanc Quinquina is made from a base wine of Vermentino and Muscat, with subsequent additional macerations of herbs, spices, the local citron fruit, and cinchona bark (quinine, hence the name). A primary flavor profile of citrus is tinged by a touch of herbal essence, all leading to a bittersweet finish imparted by the quinine. Absolutely refreshing on its own or as an ingredient in a vibrant summer cocktail.
