The Dalmore is finally starting to listen to Scotch fanatics. The first release in The Dalmore Prinicpal Collection is bottled at a higher proof (43.8%) and finished in PX casks bringing much more oomph to the glass. This luscious offering is first matured in American white oak ex- Bourbon barrels, gaining hallmark notes of soft vanilla, toffee, and honey. A proportion is then transferred to rare casks from Gonzalez Byass, which have previously held sweet Pedro Ximénez sherry and nurtured by Master Whisky Maker and Blender Gregg Glass. After approximately two years, these separate parcels are reunited to create a unique and harmoniously balanced single malt. The sun-drenched, sweetness of the Pedro Ximénez sherry adds intense layers of figs, dates, and rich maple to The Dalmore’s signature chocolate orange character. The decadent result will charm the most jaded and inexperienced palates alike.
The nose is rich, with new leather, sultanas, dates, furniture polish, ginger, Jaffa oranges, and cloves. Silky on the palate, mandarin oranges with cream, developing toffee, milky coffee, and milk chocolate. The long finish offers nougat, dark chocolate, licorice, and light spices. (GS, Winter-2020)

Bid on this bottle of The Singleton of Glen Ord 15 Year Old "Special Release" 2022 Limited Edition Single Malt Scotch Whisky (91WA). Whisky Advocate: "Red apple, cranberry, damson, and ground pepper on first sniff, this showcases a beautifully layered bouquet of wood spices, caramel, cream, and more overt vinous aromas. The palate begins with warm baked fruits, watermelon, crystalized sugar, clove, pepper, Red Vines, red apple, taffy, and fruity red wine before a spicy finish. The cautious addition of a little water opens it up fully. (JM, Winter-2022)"

Aged in a series of barrels—first American oak, then transferred to a former oloroso Sherry cask and finished in used Cabernet Sauvignon barriques—this Scotch would be an outstanding dessert accompaniment too. Look for dusty cocoa and lots of Sherried dark fruit, like figs and dates, wrapped in caramel and baking tones that linger on the spicy finish. (KN)
