This special old barrel was bottled by our friends at Dornoch Distillery under the festive Dornoch Castle Hotel Anniversary label. This series of exceptionally curated casks was selected to commemorate 25 years of independent family ownership of the special property in the gorgeous little eponymously named town. The hotel is the site of both the original Dornoch Distillery and the fabulous whisky bar that Phil and Simon worked so hard to curate in the early years. It remains one of the world’s great whisky bars, tucked into a little corner of the hotel’s modest restaurant. It is simply unconscionable that the fabulous Glen Garioch distillery remains underappreciated by the wider whisky loving world. Founded in 1797 in the town of Oldmeldrum in Aberdeenshire, Glen Garioch is one of Scotland’s oldest operating distilleries. Long known for its robust Highland character, the distillery always maintained a muscular, cereal driven style that stands apart from many of its softer contemporaries. Today it remains a traditional plant with direct fired heritage and a reputation among insiders for producing spirit of remarkable texture and depth. That relative lack of mainstream recognition has translated into extraordinary opportunities at the higher end of the spectrum. It is remarkable that Thompson Bros has been able to secure such a high quality old Highlander at such a reasonable price. The obvious sleeper this year, but those who take the plunge will be greatly rewarded.

Founded in 1824 by Sir Alexander Ramsay, Fettercairn was among the first distilleries licensed after Scotland’s 1823 Excise Act. This 12-year-old Highland single malt comes from the Eastern Highlands distillery, known for the distinctive cooling ring that bathes its copper still necks with water during distillation.

Founded in 1826 near Huntly in Scotland’s Eastern Highlands, The GlenDronach has long been associated with sherry-cask maturation. This sherry-matured 18-year-old single malt carries that tradition forward. Under Scotch whisky rules, its age statement means that even the youngest whisky in the bottle has matured for at least 18 years.

Founded in 1824, Fettercairn is an Eastern Highland distillery known for the distinctive cooling rings on its spirit stills, which send water cascading down the outside of the necks. This 16-year-old single malt carries an age statement referring to the youngest whisky in the bottle and comes in a 700ml format.

The exceptional Hart Bros. bottler is led by Alistair Hart, who has nearly 30 years of experience selecting single casks and managing the stocks for this excellent little bottler. Hart Bros. consistently bottles malts of exceptional quality and seems to have connections that few else can match. If there has ever been an independently bottled Glendronach available in the US, it's been at least a couple of decades. This wonderful product, aged in a first-fill sherry butt, is everything we want from this distillery that they won't give us themselves. Richly complex with classic Glendronach sherry character, the existence of these casks is simply stupefying considering how difficult it is to get anything out of the distillery these days. And of course, it has not been chillfiltered!

Distilled on October 2, 1992, and matured for 31 years in a single Pedro Ximénez puncheon, Cask #1112 was bottled in 2024 at a formidable 56.7% ABV. The estimated release comprises only 655 bottles. The nose is deep and enveloping, combining sandalwood, sticky toffee, dark chocolate, bramble fruit, currants, and richly sherried fruitcake. Its palate is broad and velvety, with mocha, baked plum, treacle, raisin, and tart cranberry providing both richness and definition. The finish lingers on cocoa, maraschino cherry, and dark treacle. This is a monumental old GlenDronach, combining the opulence of long PX maturation with the weight, structure, and concentration of beautifully preserved cask-strength spirit.

Cask #8004 was distilled on October 8, 1993, matured for 31 years in a single Pedro Ximénez sherry puncheon, and bottled in 2024 at 54.3% ABV. Only an estimated 707 bottles were produced. This is an especially fruit-driven old GlenDronach, with blackcurrant jam, caramelized walnuts, orange marmalade, mulled wine, and berry tart emerging from the glass. The palate combines ginger-spiced plum, orange rind, roasted walnut, and crème de cassis before a finish of ground walnut, dried grape, and caramel liqueur. The sweetness of the PX cask is balanced by mature spice, citrus bitterness, and beautifully integrated oak, resulting in a complex and remarkably complete 31-year-old Highland malt.

A profound statement of Glendronach’s sherry mastery, the 30 Year Old layers PX, Amontillado, and Oloroso casks into a symphony of depth, generosity, and refinement. Three decades of dedication in seeking the exceptional.” Dark cherry walnut in color, its nose opens with morello cherry, raisin, spiced Brazil nut toffee, marzipan, and medjool date caramel. Seductively smooth on the palate, it builds with glazed cherry, sultana cake, cinnamon raisin nut toffee, and chocolate hazelnut café crème. Bottled at 46.8 percent with natural color, it is both grand and graceful, a benchmark Highland malt.
