Yoshimura Hideo Shoten was founded in Wakayama in 1915, when Hideo Yoshimura returned from the celebrated Nada brewing district and converted a former kimono workshop into a sake brewery. Its Kurumazaka range, introduced in 2017, takes its name from the historic pilgrimage road near the brewery in Iwade. Production is led by master brewer Akiko Fujita, who spent nine years studying under renowned brewer Naohiko Noguchi. This Tokubetsu Junmai combines Hyogo-grown Yamadanishiki for the koji with Nagano-grown Miyamanishiki for the main fermentation, both polished to 60%. It is brewed with water from the Kinokawa River, a sokujo starter and yeast No. 1401, then pressed in a Yabuta, filtered through cloth and pasteurized. Bottled at 15.9% ABV.
