The experimental side of Mexican rum is on full display in Melaza con Muck, produced by Pedro Andrés and Jorge Nájera at Satvrnal in Zapopan, Jalisco. These first-generation distillers run a small operation outside Guadalajara, making everything from gin and absinthe to banana eau-de-vie. For this release, they looked to the high-ester rums of the Caribbean for inspiration, developing their own muck recipe and incorporating it into a 15-day fermentation with high-grade melaza clara. The fermented mash was then distilled in their custom copper hybrid pot-and-column still. The Rums of Mexico describes this release as the international debut of the distillery’s rum mark. It’s a particularly exciting example of contemporary Mexican distillers exploring fermentation and adapting ideas from the wider rum world to their own production.
