GlenAllachie 19 Year Old "Masters Of Wood" Ex-Solera Sherry Cask Matured Speyside Single Malt Scotch Whisky (700ml)

The GlenAllachie’s Masters of Wood series gives Billy Walker a chance to lean fully into the obsessive cask management that has become a defining feature of the distillery, and this 19-year-old may be one of the most unusual releases yet. The whisky was matured in Pedro Ximénez and Oloroso casks that had previously held Sherry within traditional solera systems for more than 55 years before being filled with GlenAllachie spirit. Unlike freshly seasoned casks, these ancient vessels have spent decades undergoing repeated cycles of extraction and replenishment, building layers of oxidative character while gradually softening the direct influence of the oak. The combination of rich PX and dry, nutty Oloroso gives the whisky tremendous depth, with the distillery describing layers of plum, treacle, mocha, black cherry, honey, cocoa, cinnamon and ginger. Bottled at a substantial 50% ABV, without added color or chill filtration, this is a fascinating expression of Walker’s philosophy that great whisky is ultimately as much about the history of the wood as the age of the spirit itself.
