Sab's "Pinot" Gin (500ml)

Leave it to a Burgundian distiller to find a way to make their terroir driven gin even more Burgundian. Sab’s Le Pinot Gin begins with the house base of eau-de-vie distilled from Burgundy Pinot Noir and Chardonnay, combined with neutral grain spirit and an elaborate collection of 15 botanicals ranging from juniper and coriander to ginger, citrus peel, rose petals, grains of paradise, cassia, cumin and star anise. But here Mathieu Sabbagh goes one fascinating step further, infusing grand cru Burgundian Pinot Noir pomace into the gin for six full months. The result is a completely distinctive 44% ABV gin that connects the flavors and raw materials of Burgundy with a decidedly modern approach to distillation. The Pinot pomace brings an additional layer of fruit, spice and vinous depth that separates this completely from conventional London Dry. It is simultaneously recognizably gin and unmistakably a product of Burgundy, precisely the sort of eccentric regional spirit we love finding.
