Tommaso Bussola’s 2020 Cà del Laito is a Valpolicella Ripasso Classico Superiore from the hills around Negrar. The estate describes the cuvée as a blend of Corvina, Corvinone, Rondinella and Molinara, grown at elevations between 280 and 450 meters. The ripasso step defines its production. After an initial fermentation in steel with indigenous yeasts, the wine undergoes a second fermentation on Amarone skins before maturation in wood. That additional contact with the Amarone skins is central to the identity of this traditional Valpolicella style.
