Matíari, meaning "the first" in the Huichol language, is master distilled by David Partida using methods that honor the original way tequila was made centuries ago. This small-batch, additive-free spirit is crafted from hand-selected Weber Blue Agaves grown in the rich soils of Amatitán. The piñas are cooked slowly in a singular clay brick oven, ensuring even caramelization and maximum sugar extraction before undergoing a two-stage crust -first by roller mill, then by traditional Tahona stone. Fermentation takes place in open air with agave fibers present, adding texture and depth. The must is distilled twice, first in a stainless steel pot still, then in copper, yielding a spirit of exceptional purity and character. With no shortcuts or additives, this Blanco is a showcase of terroir and tradition, offering a vibrant, complex, and authentically expressive tequila that stands as the benchmark of how agave spirit was meant to be experienced .
