While French rum is often associated with agricole, the legally protected style known as rhum traditionnel recalls an older tradition in which molasses formed the base. Like 99% of the rum produced on the island, this expression is made entirely from molasses and distilled in a stainless steel column still before resting three years in ex-Cognac casks. Bottled at 46% ABV without additives or chill filtration, it opens with cola on the nose and moves into a palate of rich vanilla, cinnamon, nutmeg, and subtle citrus.
