Hedonista is a small batch mezcal made by Maestro Gerardo "Kain" Santiago Hernandez in Santiago Matatlan. The wild harvested Karwinskii agave are hand harvested after 13-15 years before being processed in the traditional method - roasted in earthen mounds, mashed with a stone wheel, and fermented in traditional open-air wooden vats. Tastings notes from the bottler,"Flower blossom forward, with gentle notes of lychee fruit on the nose. Gentle smoke and anise spice up front, very sake-like in mid-palate. The taste is floral, with a long and balanced finish. With plum and dried fruits and a soft mouthfeel, this is an elegant mezcal. serve neat with aguachile, ceviche or a meze platter."
