Cinnamon and I just recently drank a bottle of this with some foie gras mousse, and I have to say it blew my mind! These bottles have been resting peacefully in the Fallet family cellars since the vintage, and are in absolutely pristine condition. On its own, this Champagne was all about truffle savor and toasty richness, but as soon as we served it with the decadent mousse, it electrified, showing its racy, bright, clean vibrancy even after nearly 20 years of ageing! If you like older vintage Champagne, this is quite the deal!

This is a very unique bottling that is perfect both for the adventurous and also for those of you who love to pair bubbles with certain cuisine. It has a very intense truffle nose with roasted nuts. Very nutty on the palate with fino sherry flavors and mushroom earthiness. The surprise is the crisp and crunchy acidity on the finish. The bugger screams out for pate, Bleu cheese or a light steak done in brown butter and mushrooms. Unique and yummy!
