After a many-year hiatus, this longtime staple from an underrated house in one of Grande Champagne's prime terroirs is finally back. Bouju played a pivotal role in reshaping my understanding of Cognac. When I first approached the category, I was frustrated by the widespread use of additives meant to soften or correct the spirit. But after tasting thousands of cask-strength Cognacs, I came to understand that traditional methods often produced better-tasting results. When done properly, the “classic” elevage remains a proven path to excellence. Yet there are a handful of producers who, through time and care, can raise untouched brandies that transcend convention. Dudognon was the first to show me this, and Bouju confirmed that there was another way that did not rely on traditional manipulation. Mr. Bouju is a true master of elevage, gently coaxing the soft nuance and layered complexity from his exceptional fruit while tempering the raw power of young Grande Champagne eau-de-vie. The only thing ever added to this Cognac is water. The result is delicate but never weak, complex without being inaccessible. It is floral and fruit-driven, and at this price point, no other additive-free Cognac delivers a better experience. It's a spectacular value good enough to serve to even the most ardent aficionado, yet inexpensive enough to consider using in your Sidecar. It's dryer than large house cognac, but never austere and since there's no sugar added it's the perfect base for many many drinks.

Notes

Francois Bouju is the man running the show these days at Bouju Cognac. He's incredibly nice, has an encyclopedic knowledge of distillation, taught us a great deal about the region and its spirits, and far exceeded the lofty expectations we had of him going in to our appointment. His vines are planted in rich limestone soils, which helps to preserve acidity in the fruit, and he is a stickler for detail. The reason the Grand Champagne region makes what is considered the best Cognac is because the soil creates grapes that are fully ripe with high acidity levels and low potential alcohol. This is important because distillation is about concentrating the flavor of a base substance. If you've got a wine sitting in a tank oxidizing, you're going to have an oxidized flavor in the Cognac. High acidity levels help prevent oxidation while distillation is taking place and prevent the need for stabilizing sulfur. At the same time, you need wine with a low alcohol level so as to not overpower the flavor of the fruit. Full ripeness is also necessary to have any flavor at all. You can't simply pick early to preserve acidity because your wine will taste terrible. The resulting profile of the Fines Saveurs is a high acid, fruit-forward style of Cognac. This is zingy, expressive brandy that exemplifies the quality of Bouju's base wine. Ideal on the rocks or as a mixer, Bouju is the perfect bottle for your French 75 or Sidecar cocktail. A hot deal.
