Elisabeth and Jean-Marie Egrot have made one of the most elegant, textural and complete non-vintage champagnes that we carry- and it is still at an affordable price! It is composed of 80% Pinot Noir from the grand cru of Ay and 20% Chardonnay from the 1er cru of Louvois and dosed at a little under 8 grams per liter. This wine has the silky texture and tiny streamers that only patience brings and I think you will be surprised at the finesse of this bottle. That being said, the power is still there, and I love this Champagne with full flavored, hot smoked salmon!

Picture black cherry in a bag of chalk. Aÿ pairs some of Champagne's steepest south-facing slopes with its purest chalk, and this bottling shows both: powerful, ripe Pinot fruit (two-thirds of the blend) wrapped around a core of minerality. It's almost all Aÿ Grand Cru, fermented in stainless steel and aged three years on the lees. A faint, clean reductive note, like truffle or struck match, adds intrigue. You may know this estate as Elisabeth Goutorbe. The name changed, but the quality never skipped a beat.

Really pretty nose, little bit of baguette along with ripe and sweeter green apple and lemon curd. The palate is just lovely, really lush with a moderate richness not quite approaching cocktail/aperitif style but that's mostly due to the acid being a touch too much to accommodate that style. There's a beautiful red apple note along with some lemon curd and a little lemon juice. There's a really delicious slightly saline minerality to the finish rounding the whole thing out and encouraging me to take another sip each time. This is a perfect champagne for pairing with a slightly richer and bigger meal, I could still see this with oysters because I can see all Champagnes with oysters, but also some roast chicken and even salmon would be good as well.

I recently had the pleasure to retry this bottling....12 October 2025. As always with Elisabeth's champagnes, this one is another winner with high quality and an extremely affordable price. Medium to full-bodied with black cherry and roasted nut flavors. Elisabeth's bubblies always finish clean, with fresh minerality and this bottling is no exception. The finish is long, clean and mineral-laden. She is quite unique in this, being a Pinot dominant house.

Notes

Formerly called Elisabeth Goutorbe Cuvée Éclatante (Elisabeth changed the name to her married name Egrot when she and her husband established their own facility, moving from her parents' operation in Aÿ). This 100% estate-grown direct-import bottling blends two-thirds Pinot Noir and one-third Chardonnay, sourced primarily from the Grand Crus of Aÿ and Louvois with additional fruit from the 1er Crus of Tauxières and Mutigny. Dosage is just under 8 grams per liter. The wine displays the silky texture and fine mousse that only patience brings, offering surprising finesse while retaining underlying power. Dark cherry flavors intertwine with perfect sourdough toast notes. Pairs beautifully with full-flavored, hot-smoked salmon. If you're trying only one wine from this producer, this should be it.
