God bless Andrew Symington and Iain Henderson for what they have helped to create at Scotland's smallest distillery. It is also the closest to the working 19th century farm distilleries that used to be found all over central Perthshire. Just imagine, huge external worm tubs that condense the vapors from the stills and the last open-wort cooler left in Scotland. Well worth a visit to see all this Victorian equipment in action! This 10 Year Old is fruity-sweet and smoky on the nose with a light marzipan taste that comes through smooth on the long finish. Slightly dry and malty with a nutty, almond-like aftertaste.

Perhaps the most underappreciated distillery in Scotland. It's tiny, beautiful, and makes an incredible whisky. It's also the spiritual home of Signatory - the famed independent bottler and owner of the distillery. I recently revisited the standard 10 year and realized just how much I personally also underappreciated the malt. It's darker than I remember, a rich amber hue. It's flavors are golden and peachy. There is a faint peat component, like those peaches have been grilled. The sherry influence is unmistakable, but not overpowering. It's a phenomenal every day drinker, especially for a sherry lover who misses the days when Mac 12 wasn't trying to be 100+ bucks.
