If you enjoyed the great wines of Pierre Paillard in the past, this is a must-have rose from the same village, yet is made with entirely organic, entirely barrel fermented fruit to boot. The quality is unmistakable with really nice red cherry and strawberry fruit, delicate toast and minerals with a touch of spice for added complexity. The profile is powerful and complex but somehow also light and easy to drink with a precise and long finish.

Bouzy is the Queen region for Pinot Noir in Champagne, and as such, Nicolas Maillart has made a Rosé from there that exudes queen-like power. On the lower end of still red wine blended into the vin clair, don't let the pale pink color fool you, she's structured and (enjoyably) edgy. The clean fresh strawberries on the nose are matched by a phenolic palate that makes this a universally great wine. It can be enjoyed alone or with food - surprise your friends (or yourself) by pairing this with a pork dish.

Imagine taking a big whiff of a freshly baked raspberry tart on a summer's day and when it cools down, adding fresh whipped cream to take a big bite. The bite is creamy and toasty with loads of baking spices from the crust and cream. The raspberries are sweet but tart in the middle, making all the flavors pop. That is how I experienced my first sip of the Maillart rosé. A rich, creamy, spice filled nose and palate is heightened by tart red summer berry flavors. Brambly, but rich with hints of orange zest and classic chalky minerality.
