Tedorigawa brewery is featured in the documentary film, "Birth of Sake." The brewery is located in Ishikawa prefecture and has been around for over 114 years. The Silver Mountain Yamahai Junmai is a rich complex sake with high acidity. You get honey, maple, and I want to say yogurt on the palette. It is delightful to drink at room or even chilled!

This sake has a very clean that has plenty of steamed white rice scents with cream and pine nuts, as well. In the mouth, it is relatively weighty, with pure, thick flavors of unroasted nuts, honeycomb and exotic spices. The real surprise here is the acidity, which lingers on the finish and at the back of the throat. I think that this one deserves a full meal with distinct pairings.
