Light yellow. Vibrant quince, orange zest and green apple aromas are complemented by smoky minerals and honeysuckle. Stony, sharply focused citrus and orchard fruit flavors show very good energy, turning juicier and deeper with air and picking up a melony quality and a hint of anise. Finishes on intense notes of dusty minerals and ginger, with very good clarity and persistence. (JR)

A boisterous mousse leads to a bone-dry palate, with a crisp green-apple flavor and tight minerality. It is still very young and this bottling, like all very dry Champagnes, needs to be aged in order to realize its full potential. Drink from 2021. (RV)

Floral on the nose, but dry and minerally on the palate, offering subtle notes of white cherry, mandarin orange peel, fresh ginger and almond skin, all set in a chalky texture. Leans toward the austere side, but the balance is there, so enjoy this with light seafood or shellfish. Disgorged May 2016. Drink now through 2020. (AN)

The latest rendition of Drappier's NV Brut Nature Pinot Noir Zero Dosage André et Michel offers up pretty scents of crisp green apples, beeswax, dried white flowers and oyster shell. On the palate, it's medium to full-bodied, ample and vibrant, with a youthfully frothy mousse, ripe acids and a precise, chalky finish. There's none of the austerity that mars some no-dosage Champagnes, and the wine makes a persuasive case for the proposition that the Aube is one of the areas best suited to that style. (WK)
