The spectacular Double Zero Eau de Vie de Cidre from Cider Master Cyril Zang is without a doubt one of the world's great white spirits. This small cult producer of cider is basically not available and his Eau de Vie has been the stuff of legend for years. Now it's finally upon us and absolutely as delicious and special as you'd expect. Cyril partnered with illustrious Jean Roger Groult to create this uniquely pure distillate of Calvados apples. Using more than 30 varietals of apples, primarily bittersweet with a bit more sweet than sour to balance it all out, the duo lightly presses the ultra-ripe apples before natural fermentation and 10 months of aging on the lees. An ultra-slow distillation on Groult's small wood-fire stills and a stringent heart cut results in one of the most unusual and perplexing spirits of any kind in the world. Powerfully complex and filled with aromas one would never expect, there are very, very few pot-stilled white spirits that can truly be considered world-class without augmentation or aging of any kind, and this is without a doubt on of the top of that list. Production is extremely limited, so don't expect this to be around for very long.
