Perbacco is Vietti's Langhe DOC made entirely from Nebbiolo. The fruit comes predominantly from selected vineyards in the Barolo and Barbaresco zones. Vietti describes keeping the individual parcels separate through fermentation and maturation, choosing which lots will become Perbacco and which will continue ageing as Barolo. Both barriques and large casks are used; the final blend is assembled in steel before bottling.
