The nose is clean and pure, with a sun-kissed ripeness, and reveals fresh aromatics of candied green apple, lime, and bread dough. The mousse is elegant, and the wine is ripe, with a rounded feel, and fresh with ripe green apple, lemon-lime, and chalk, followed by a balanced and fairly long finish. Lemon confit, white flowers, truffle, crushed rocks, mint and tangerine peel are all laced together in this finely-knit, chiseled Blanc de Blancs. Time in the glass brings out the wine's perfumed aromatics and an attractive exotic quality that is so alluring. This release is based on 2016 with 32% reserve wines. Outer quote mark An exceptionally elegant, silky and surprisingly delicate champagne. I was expecting power, but this is like a mouthful of shimmering ribbons. An unusual floral fragrance, like the elusive scent of lily of the valley in an early-morning garden. Rich citrus woven into baked pear, tingling with green-apple sherbet. The bubbles float over the wine like cashmere lace. Tremendous purity. And the wine develops in the glass in a way I was not expecting, becoming richer, more dense, beginning to taste of violets and fresh-churned pink clay, of bread-yeast starters and sleepy pools of candlelight. Audrey Frick's notes on the producer for "Mathieu Roland-Billecart assumed the position of CEO at this estate in 2019 and represents the seventh generation in his family. The house is based in Maureuil sur Ay, which is also the location of the monopole vineyard of Clos Saint-Hillaire. They source from approximately 300 hectares of vines, of which they own a third. French and Stockingur barrels with medium toast are purchased new and seasoned at the house for three to five years before use. About 80% of production is fermented and aged in stainless steel tanks. Only the best plots are fermented in barrels at cold temperatures, before getting transferred to stainless steel tanks for aging after no more than six months. None of the wines are aged in barrel, and they never allow for malolactic fermentation to occur in barrel." (11/2022)

I've often skipped over the any of the Billecart Salmon Champagnes that weren't their Brut Rose, thinking they were a one trick pony. Today I was proven wrong. We tried five of their bottlings that we carry in store and each one was elegant and complex in its own right. However, this Blanc de Blanc really stood out to me. ​A richer style for the house, this 100% Chardonnay goes through partial malolactic fermentation to bring a creamy citrus character, almost like lemon meringue pie (just without the nutty, pastry aspect you may find in oaked Blanc de Blanc as this doesn't see any oak). That richness is elegantly balanced with long lived acidity that keeps each sip active on the palate. An undertone of chalky minerality from the Grand Cru soils adds just the right amount of depth needed to complete the wine. 10 minutes after tasting, I bought myself the magnum!

I tasted this beauty on the 8th of September. It is simply great with golden apple fruit, minerals and sea salt on the nose. On the palate, more golden apple fruit with just a hint of caramel and full minerality. It has the bonus of an extremely long finish of salinity and lemon meringue.

If you like your Champagne clean and refreshing, this is the best bottle that we have for you. Antoine Billecart insists on fermentations that are slow and cold, and the family has developed its own strain of yeast that can work in super low temperatures, resulting in a Champagne that is light as feather and arcs with electric excitement. This wine delivers all of this without any harsh grain, since it has been aged for over sixty months on the lees... A fabulous treat!
