From the McCarthy Family Orchards in the foothills of Mount Hood comes Clear Creek Distillery's Eau de Vie Pomme. This release was made using a traditional European pot still and barrel aged for eight years. What you get is a beautiful amber-hued brandy that smells remarkably of fresh apples, but has the complexity of an oak-aged gem on the palate. Rivals the best Calvados.

I'm not sure if anyone else read Mr. McCarthy's article in the New York Times about making Eau De Vie spirits, but I was fascinated by the process of how he captured the essence of the Douglas Fir tree in a bottle. This Pomme apple brandy, essentially an American Calvados, is absolutely outstanding and would make the perfect after dinner drink for almost any fine meal. Rich barrel flavors combine with can only be described as the soul of an apple to create a robust, yet smooth drinking spirit. My hat is off to Clear Creek.

- When people consider domestic wine, they normally think about the state of California. - Highly touted for its Pinot Noirs, Oregon is part of the up-and-coming winemaking industry in the Pacific Northwest of the United States. Most of Oregon is directly affected by the climate coming off of the Pacific Ocean, giving it mild winters and wet summers. This makes it a difficult place to ripen grapes, but some say that the harder grapes have to struggle, the more complex they will turn out to be. Chardonnay and Pinot Gris are two important and successful grapes grown in Oregon.
