Vara is a new project from Laurent Gruet after stepping away from his family's famed winery in New Mexico. The Vara wines are taking everything Laurent has learned from four decades of making wine first in Champagne and then New Mexico, and giving him the freedom of expression to create truly inspired wines. The Silverhead Brut is a fascinating wine blending Chardonnay from Washington's Ancient Lakes AVA with Xarel-lo/Macabeo from the DO of Penedes in Spain. 18-24 months en tirage and a low dosage of 8g/L.
