Fukucho is the only brewery to use Hattanso, a once abandoned rice. Toji Miho Imada painstakingly revived the rice by first growing it herself in order to learn how to brew it. She passed along her knowledge to farmers that now grow it for the brewery. After years of experimenting, Miho discovered that milling the rice much less than most junmai-shu results in the best balance and complexity, and also allows the full flavor of the rice to be expressed in all its haughty boldness. Full flavor, earthy touches and great texture with a long, persistent finish. Pair with grilled oysters with lemongrass crème fraiche or red curry, coconut, and ginger-infused steamed clams.

The re-establishment of the Hattan-so variety of sake rice is a personal project of master brewer Miho Imada. Fukucho Forgotten Fortune Junmai Sake is made entirely from Hattan-so rice milled to 75%. It is a bold, full-flavored junmai, supple and richly textured, very much in the style for which Hiroshima prefecture is famous. A superb value!
