 Very pale, green-tinged color. Fruity, vibrant aromas of lime, fennel and minerals, with a hint of white pepper; this one is also rather Chablis-like. Rich and soft in the mouth, conveying lovely fullness without weight. Just a bit aggressive and warm on the finish. This needs to be served with food. The water in the Hiroshima prefecture is known for being very soft. Made by one of the very small number of female brewers in Japan. (2007)

Yamada Nishiki and Hatta Nishiki polished to 55%. The very soft water in this region results in a sake with an extremely floral nose and a soft, very fruity style. This is bottled without charcoal filtering, to allow more of the natural aromatics to make it into the bottle. And the flowers and fruits in the nose show you why they chose to do this. Made by one of the only female sake brewers in Japan.

Moon on the Water will show Sake new-comers what Ginjo is all about! Aromas of honeydew melon, bubblegum, cotton candy, grape and sweet apple. Intoxicating aroma, but skillfully avoids "fruit-bomb" territory with hints of subtle spice and steamed white rice. On the palate, the sake is medium-dry with mild acidity and moderate savoriness. Bubblegum and grape flavors last well into the finish. And, unique to this sake, a texture of firm resiliency like a perfectly cooked grain of rice. It's almost chewy, but in a way that feels silky and elegant. Outstanding.
