Outer quote mark 1997 was pretty much a textbook great vintage for Napa Cabernet with good yields. Made from 100% Cabernet Sauvignon and aged for 22 months in 100% new oak (55% French and 45% American), the 1997 Cabernet Sauvignon Private Reserve Georges de Latour gives a deep garnet-brick color and quite a meaty nose with notions of chargrill and beef drippings over a core of warm cassis, blackberry pie and candied violets plus wafts of Chinese five spice and dried Provence herbs. Medium to full-bodied with 13.8% alcohol, it has a firm, chewy texture and just enough freshness, delivering a great concentration of savory fruit, finishing long and earthy. In a maturity sweet-spot at the moment, now is a good time to drink this vintage, but there’s certainly no rush. (LPB) Inner quote mark (5/2019)

Outer quote mark A profoundly deep nose of red and black fruit, with cedar, ginger and nutmeg. The sense of balance and grace is sublime, as layers of cassis, plum and cinnamon keep unfolding. The chewy finish is lengthy and elegant, and it should be held for no less than five years. This bottling honors its pedigree as California's first classic Cabernet. Outer quote mark Dark red with ruby tones. Aromas of dark fruits, licorice, exotic spices and herbs, plus a sexy element of oak char. Silky, adamantly dry and classic, in a distinctly claret-like style. Can't quite match the 1990 for concentration or thickness, but delivers enticing subtle sweetness and lovely pliancy to its flavors of black cherry, cassis, mint and black pepper. Perhaps in part due to the modest alcohol, this wine boasts noteworthy aromatic complexity in the mouth. Broad, dusty tannins saturate the sides of the mouth. Still a tad youthfully aggressive on the end, conveying an impression of medicinal reserve. There's certainly no rush to open this wine. (ST) Inner quote mark (4/2019)

Cabernet Sauvignon and Blends

- Cabernet Sauvignon has come a long way from its role as a blending varietal, however dominant, in the wines of Bordeaux. Today it is the most planted red varietal in the world. Identified as a descendent of Cabernet Franc and Sauvignon Blanc, the late-ripening Cabernet Sauvignon needs to be planted in warmer climates to fully ripen. Its small berries can easily be identified for their distinctive blue color, thick skins and high tannins. And while the varietal has its own definitive characteristics: green pepper-like aromas and black currant flavors among them, it is perhaps most prized for its ability to convey terroir, vintage and winemaking. A relatively new varietal, Cabernet Sauvignon started making inroads into the wines of the Médoc and Graves in the late-18th century. Today it is also dominant in the up-and-coming Entre-Deux-Mers region of Bordeaux and can also be found in Southwest France. It is the companion varietal to Sangiovese in Italy's Super Tuscans and is planted all over Europe, stretching to lesser-known winegrowing regions like Russia and Lebanon. In the Americas Cabernet Sauvignon has found champions in every nook and cranny of California and among winemakers in Washington, where it complements plantings of Merlot. In South America, Cab thrives in Chile, but can also be found in smaller amounts in Argentina and even in Mexico.
