The Vergers de La Moriniere, the farm the makes Hubert Calvados, represents the true heart and soul of apple brandy production. Family owned and operated for 5 generations, they're commmitted to doing it the old way. The right way. They own 50 hectares of fruit trees with over 45 varieties of apples. They plant mostly bitter sweet and bitter varietals which are especially good for making great calvados. The generation is led by Astrid Hubert, who we first visited in 2013. Her deft hand and attention to detail makes for exceptionally vibrant and lifted style of calvados, but don't be fooled, this cask strength single barrel packs a bunch. It's just outrageous that we're able to sell 30 year old cask strength single barrel Calvados for less than $100. It takes nearly 30 years for the trees that made this brandy to start producing commercially viable amounts of fruit and another 30 years of careful attention to this brandy to achieve what we consider to be an absolutely quintessential expression of raw unadulterated calvados. There are almost not products available in this style in the market and the few that come close are 3 to 4 times the price - arguably not even as good. Astrid picked this incredible cask for us and bottled it without reduction, you'll rarely find a more complete and complex brandy in any category.

A thirty year old Calvados is a special treat. The 1993 Domaine Hubert has a mature and dense apple nose. In the mouth, it is full ,round and creamy, with a concentrated apple flavors. There is a long and dry apple flavored finish.

There are so many small French spirits producers that are grossly undervalued. While we make it our business to root them out and champion their work for the American market, there are perhaps none delivering the quality of Hubert for such a modest price. Thirty years after distillation this apple brandy is harmonious and engaging. It never shies away from the apples themselves, but the amount of compelling sweet spice and savory flavors that envelope that apple core is astounding. In the middle lies the heart of baked apple, sweet as pie, but a thick blanket of cinanmon, nutmeg, cardamom, and allspice dust it. A little forest floor and a hint fresh rubber add incredible intrigue. Gobs of vanilla linger over long planks of ancient oak. The oily texture is delightful rolling around the palate. The finish is long and winding, covering tons of ground before inviting another sip. All for $100! Truly remarkable.

There's just no reason for this to be so inexpensive. I'm not saying I feel bad about it, but honestly considering how expensive old calvados is from normal channels, it seems the Hubert's are beating the market by a mile. Anyway, the price is not what matters here, it's the exceptional quality! I'm going to have trouble not drinking this whole sample! The nose is fully developed with rich deep roasted apple, dense toasted vanilla, a huge array of old woods and bitter barks, subtle savory herbs and sweet spices. On the palate, we've got pick dense warming spice up front, with more oak and vanilla, followed by a long sweet dark baked apple on a long lingering, very satisfying finish. It's a big boy at 49%, but has more depth, intensity and richness than almost any apple brandy on the market today.
