Villa De Varda was founded by the Dolzan family in the early1800s and is today being run by the 6th generation. Each generation has carefully taken their forefathers knowledge and expertise and yet judiciously improved the grappa making process as advancements in distillation technology and farming practices made better and better distillate possible. Today the Mezzolombardo distillery embodies the height of Trentino Grappa. While all grappa is made from pomace, not everyone uses someone else’s byproduct to make their spirit. Varda sets out to grow grapes capable of making the best grappa, not the best table wine, and those decisions start in the field. Carefully ripened skins are critical to quality grappa, so the fruit selection is massively important. Varda is also set apart of a unique discontinuous distillation. A wild array of pots and columns run in slow batches and tight temperature tolerances ensure the most aroma and flavor is extracted from the carefully prepared pomace. After distillation, Varda also take the time to rest their spirit - a critical step to harmonious and delicious grappa. It is only thanks to a change in importer that we were able to secure the last remaining stocks in the US at a steep discount. One this one is gone the pricing is gone for good.
