Shui Jing Fang, meaning "the distillery by the well," traces its lineage back to the original well dug by Master Wang in 1408, a legacy that also gives its "Wellbay" name significance. Renowned as the oldest continuously operating Baijiu distillery in China, it holds an extraordinary cultural heritage. During a renovation in 1998, the original Shui Jing Distillery was unearthed, revealing a large-scale, ancient distillery under what had become modern-day Shui Jing Street. In a remarkable fusion of past and present, bio-cultures extracted from the ancient cellars during an excavation led by the Chinese Academy of Sciences and Tsinghua University were incorporated into the "qu" (fermentation agent) of every Shui Jing Fang bottle produced. With its unique wealth of distillers' yeasts cultivated over 600 years, every sip of Shui Jing Fang relishes a connection to ancient dynasties. The Baijiu is traditionally aged in 1-ton terracotta urns, generally for 3-5 years. The carefully chosen aged urns are then used for blending, ensuring a consistent flavour that honours the esteemed Shui Jing Fang legacy.
