Another in precedent value from the exceptional producer in Mantilly, this time aged over thirty years in ancient casks before being bottled exclusively for K&L. The barrel in question was distilled from 70% pears and 30% apple in 1984 and rested in the gorgeous farmhouse cellars at the Pacory's small estate in the Domfrontais. This region is renowned for it's old pear trees, but the far-flung area is also famous for being one of the last areas to accept AOC control over their spirits. The local reputation for illicit distillation and tax-avoidance, is matched by its international reputation for producing exceptional spirits. Pacory, of course, has long been devoted to the LEGAL production of pear-based Calvados. An old adage in the area is that you plant apple trees for your children and pear trees for your grandchildren. That's because pear trees take decades to begin producing adequate quantities for production. So the trees that produced this Calvados were likely planted in the late 1800s at the earliest. Expect the peak experience in terms of complexity for a pome fruit spirit.
