The Mountain Gay XO (formally Extra Old) is aged in 3 different cask types in the hot Bajan climate for an extended period of time. The local laws prohibit the addition of sugar before bottling making Barbados one of the few rum producing nations with a significant quality commitment to avoid adulterating their rums with sugars and other flavoring. The result is the need to produce the best rum possible in the distillery and warehouse rather than the laboratory. This exceptional product is aged in a blend of cognac, ex-bourbon and old American Whisky barrels. A blend of traditional column and double retort pot stills, it offers a rich robust character with complexity and nuance unmatched elsewhere in the rum producing world. Expect a full bodied rum with plenty of vanilla, spice, deep caramel and dried fruit flavors. The round mouth feel leads to a long dry finish.
