This wine is a Korean burrito wine. While that makes perfect sense to anyone who has had one, up until that point it really doesn’t make sense. The two delicious things that are combined in this wine, the Korean and the burrito are Syrah and Cabernet. When I started learning about wine there were Rhone wines and Bordeaux wines, two separate things. Then I was introduced to Bin 389 and my life was changed. This wine reminds me of that moment and wine. This wine is heady and rich with lots of dark fruits, tobacco, herbs, pepper and creamy oak. It is that blend of aromatics that gives it a strangely familiar quality. The palate is where this blend shines, the core is delicious dark cabernet and then it is bolstered on the mid palate by that gorgeous Syrah fruit. It is structured and round with layers of fruit and spice. It has a good finish with a lingering dark red fruit not backed by spice. It begs the question, why isn’t this done more often? I don’t know. But I am always happy when I see it, I almost always buy it, and am even happier when I taste it. Just like a Korean burrito.

Cabernet Sauvignon and Blends

- Cabernet Sauvignon has come a long way from its role as a blending varietal, however dominant, in the wines of Bordeaux. Today it is the most planted red varietal in the world. Identified as a descendent of Cabernet Franc and Sauvignon Blanc, the late-ripening Cabernet Sauvignon needs to be planted in warmer climates to fully ripen. Its small berries can easily be identified for their distinctive blue color, thick skins and high tannins. And while the varietal has its own definitive characteristics: green pepper-like aromas and black currant flavors among them, it is perhaps most prized for its ability to convey terroir, vintage and winemaking. A relatively new varietal, Cabernet Sauvignon started making inroads into the wines of the Médoc and Graves in the late-18th century. Today it is also dominant in the up-and-coming Entre-Deux-Mers region of Bordeaux and can also be found in Southwest France. It is the companion varietal to Sangiovese in Italy's Super Tuscans and is planted all over Europe, stretching to lesser-known winegrowing regions like Russia and Lebanon. In the Americas Cabernet Sauvignon has found champions in every nook and cranny of California and among winemakers in Washington, where it complements plantings of Merlot. In South America, Cab thrives in Chile, but can also be found in smaller amounts in Argentina and even in Mexico.

The Chilean wine industry is known for being consistently free of phylloxera, but political and economic unrest has brought its own source of disorder. The recent establishment of a free market has resuscitated the wine industry, and significant investments have been made, switching the economic focus from domestic production to exports. Chile produces roughly a quarter of the wine Argentina produces, and is known for single-varietal exports, predominantly Cabernet Sauvignon, Merlot and Chardonnay. It's a popular region in the U.S. known for inexpensive and tasty wine.
