The little town, Echigo Yuzawa in the Chubu region of Niigata prefecture is famous it's heavy snowpack and relaxing hot springs. The purity of their sake is attributed to the prestine waters running off the these white capped mountains. It was here in 1855, that Tosuke Minatoya founded the Shirataki brewery on the Mikuni Road, an important road connecting Niigata prefecture and Tokyo. It quickly became a favorite stop for travellers making the long trek across the mountainous pass. The name of “Jozen Mizunogotoshi” comes from Chinese
philosopher Lat-tze. The original meaning is “A good way of living is to live smoothly and flexibly like water by changing shape”. The best sake share this with the element of water, it's potential is limitless. This is their flagship Junmai Ginjo and perfectly embodies the elegance and depth of the finest Niigata sake.
